Healthy sweet treats – Choc Chip and Chickpea cookies

CHOCOLATE, PEANUT BUTTER AND CHICKPEA COOKIES

I’m on a health kick and this means I’ll share blog posts with you that I’ve written featuring healthy food recipes that I’ve tried, tested and loved as well as topics covering overall health, well being and fitness.

This is a popular recipe that many of my family and friends love. It’s perfect chocolate and peanut butter lovers and I promise these chocolate and peanut butter cookies are delicious, super easy and very quick to make. I love chocolate and because of my lack of will power, have a chocolate box with a lock and key, to avoid eating up any of the chocolate just laying around.

 

INGREDIENTS YOU’LL NEED

Healthy Cookie (13)
Rice Malt Syrup (a healthier options to use instead of honey), Chick Peas, Peanut butter (I like to have texture in my cookies so prefer the crunchy option), Sugar Free Chocolate (one of a very few stevia sweetened chocolates I’ve found on the market available in Woolworthes. I prefer dark chocolate but the milk chocolate works just as good), Almond meal (to add if the mixture is too runny).

Step 1: Drain and empty 1 can (400g) of Chickpeas into a mixing bowl.

Step 2: Add one cap full of Vanilla Essence.

Step 3: Add 1-2 tablespoons of Peanut butter.

Step 4: Pour 1/4 cup of Rice Malt Syrup. Depending how sweet you’d like the mixture, you might need to add more. Because Rice Malt Syrup isn’t as sweet as honey, you tend to add more. If you need more, this is where you will need to add the Almond Meal, to ensure that the mixture doesn’t end up too runny.

Step 5: Add 1 teaspoon of baking powder.

Step 6: Blend until all of the chickpeas are crushed.

Step 7: After mixing, taste to see if you need to add any more Rice Malt Syrup. You can see that my mixture is a bit wet, so to make it easier for me to roll into cookies, I need to add Almond Meal.

Step 8: Add enough Almond Meal so that the mixture becomes a lot more sticky and solid. No need to go overboard, as you want your cookies to be a bit moist in the middle. So if you end up putting too much Almond Meal your cookies will come become dry and hard.

Step 9: Time to add at least 1/2 of Chocolate (my favourite part). I tend to always do a taste test at this stage, I realise it’s not required, but remember I’m a chocoholic and can’t be expected to bake with chocolate without having a little piece 🙂 Make sure to blend or even chop up your chocolate roughly.

Step 10: You can see I’m not fussed if there are some chunky bits, so don’t be too precious with your chocolate.

Once your mixture is perfect, simply scope it into your hands, roll into a ball, flattened it between your palms and lay it out onto the tray, leaving 1-2 cm between each cookie.

Set oven to 180 degrees and bake for 10-15 minutes.

Now serve with your favourite cup of tea or Almond Milk hot chocolate.

    Can I sub chickpea flour instead of the chickpeas?

      Hey Sam, Good questions. I honestly don’t know if you can? I would assume if you used the flour instead it wouldn’t be as moist. If you do try let me know if you liked it.
